Pecan Pie Bars
3 Cups all-purpose flour
1/2 cup granulated sugar
1 cup margarine
1/2 teaspoon salt
1 1/2 cups light corn syrup
1 cup granulated sugar
1/2 cup brown sugar, packed
3 tablespoons melted butter
1 1/2 teaspoons vanilla extract
2 1/2 cups pecans, finely chopped
Preheat oven to 350 degrees F. Grease bottom and sides of a 15×10-inch jelly roll pan; set aside.
In a food processor, or using a pastry blender combine crust ingredients until they resemble coarse crumbs. Press mixture into bottom of prepared jelly roll pan.
Prepare filling: In a large bowl combine eggs, corn syrup and sugars; add vanilla. stir in pecans and spread evenly over crust.
Bake for about 25 minutes, or until bars are set.
Cool on wire rack and cut into 48 squares.
