Pear-Yogurt Muffins
Ingredients
2 cups sifted all-purpose flour
1/2 cup granulated sugar
1 1/2 teaspoons Clabber Girl Baking Powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup yogurt – unflavored
1 egg, slightly beaten
1/4 cup oil
1 – 16 oz. can pears, drained and diced
Instructions
Sift dry ingredients into bowl.
Blend yogurt, egg and oil in small bowl
Add to flour mixture with pears, stirring until just moistened.
Fill greased muffin cups 2/3 full
Bake at 400 degrees F. for 20 to 25 minutes, or until golden brown.
Yield: 12 servings
