Peanut Butter Banana Cake


1 c. mashed ripe bananas
1/2 c. margarine, softened
1/2 c. creamy peanut butter
1 c. whipping cream
3 eggs
1 pkg. butter recipe cake mix
2 tbsp. flour

1 can commercial cream cheese frosting
1/2 tsp. banana flavoring
2 drops yellow food color

1/2 c. powdered sugar
2 tbsp. creamy peanut butter
2 tbsp. milk
1/2 tsp. vanilla

2 med. bananas, sliced, sprinkled
with Fruit Fresh to prevent


Heat oven to 350 degrees. Grease and flour 9×13 inch pan. In bowl, combine mashed bananas and margarine; mix well (mixture should look curdled). Add peanut butter, beat well. Add whipping cream and eggs. Beat at high speed until smooth. Add cake mix and flour. Beat at low speed until moistened. Beat 2 minutes on high speed. Pour into pan. Bake at 350 degrees for 45-55 minutes. Cool 15 minutes or until cool. In small bowl, combine all frosting ingredients; stir until smooth. Frost cake. In small bowl, combine all glaze ingredients. Beat until smooth. Drizzle glaze over frosting. Just before serving, garnish with banana slices. Store in refrigerator. 12-15 servings.
