Peacock Vegetables

2 medium red onions cut into 8 wedges
2 small yellow squash, cut into 1/2 inch thick slices
2 small zucchini, cut into 1/2 inch thick slices
3 red, yellow and green peppers, membrane removed and cut into 1/2 inch strips
4 cloves garlic thinly sliced
2 Tbsp Balsamic vinegar
2 Tbsp fresh Parsley snipped
1 Tbsp Olive oil
1 tsp dried Oregano crushed
1/2 tsp Cookies Flavor Enhancer

In 9 x 13 inch baking pan, combine vegetables and garlic. In a screw-top jar, combine the parsley, vinegar, olive oil, oregano, and flavor enhancer. Cover the jar tightly and shake the oil mixture well. Pour over the vegetables and toss to coat. Bake in a 425 degree oven for 25 minutes or until vegetables are crisp-tender, stirring twice. 8 servings.
