Pasta With Roasted Veggies

Ingredients

1 lg. red onion
Zucchini
1 sm. eggplant
Red, yellow, green peppers
Whole cherry tomatoes
Toss with: 2 tbsp. olive oil
Salt & pepper
3 to 4 garlic cloves, halved
1/4 c. Italian parsley, chopped
Cut veggies all about the same size as cherry tomatoes, then toss with seasonings. Spread on foil covered and sprayed with Pam cooking spray cookie sheet. Roast at 400 degrees for approximately 45 minutes, stirring a few times. About 15 minutes before they’re done, stir in some chopped fresh basil. Veggie are done when very soft and lightly browned. Toss veggies with hot cooked fresh angel hair pasta and sprinkle with fresh Romano and Parmesan cheese.
