Party Chicken Quesadilas

Ingredients

  • 2 chicken cooked breasts shredded
  • 1 can rotel with green chilis drained, save juice for Spanish rice
  • 1 cup Monterey jack cheese
  • 1 1/2 cups shredded Colby Jack cheese
  • 1 pkg. tortillas
  • 1 chopped japeleno, opt
  • 1/2 can cheddar cheese soup
  • 1/2 can tomato soup
  • 1 small onion chopped and browned
  • black olives chopped
  • sour cream
  1. In a sauce pan combine soups, tomatoes, 1/2 of each cheese, pepper, onion. Heat to bubbling stage. Reduce heat to low simmer 3-5 minutes stirring constantly
  2. Down the center of each tortilla add heaping spoon of mixture sprinkle with remaining cheese.
  3. Fold; cut in 1/2 and bake at 350ยบ until lightly brown top with salsa and olives and sour cream
