3 cups Hodgson Mill white flour
2/3 cup sugar
1/2 cup grated Parmesan cheese
4 teaspoons Clabber Girl Baking Powder
1/2 teaspoon salt
1 beaten egg
1 3/4 cups milk
1/3 cup walnut oil or cooking oil
1 cup chopped walnuts
Grease a 9x5x3-inch loaf pan. Set aside.
In a large mixing bowl combine flour, sugar, Parmesan cheese, baking powder, and salt.
In a small bowl stir together egg, milk, and oil. Add to flour mixture, stirring just till moistened (batter should be lumpy). Stir in 3/4 cup of the nuts. Pour batter into the prepared pan. Sprinkle remaining nuts over the top of the batter.
Bake in a 350¡ oven about 1 hour or till a toothpick inserted in center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove from the pan; completely cool on the rack. Wrap and store overnight before slicing. Makes 1 loaf (18 servings).
