Orzo-Lentil Soup

Ingredients

  • 1 1/2 cups lentils, rinsed well
  • 6 1/4 cups nonfat chicken broth
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground black pepper
  • 3/4 cup orzo
  • 1 medium onion, chopped
  1. Combine lentils, 6 cups broth, cumin and black pepper in a large pot. Bring to a boil. Reduce heat, cover and simmer for 25 minutes.
  2. Stir in orzo and continue to simmer until orzo and lentils are tender, about 20 minutes more.
  3. Stir in onion and serve immediately.
