Orange Raisin Muffins
2 cups sifted flour
3 teaspoons Rumford Baking Powder
1/4 cup sugar
1/4 teaspoon salt
Grated rind of 1 orange
1/2 cup seedless raisins, chopped
1 egg, beaten
1/4 cup melted shortening
3/4 cup milk
1. Sift flour, Rumford Baking Powder, sugar and salt together. Stir in orange rind and chopped raisins.
2. Combine egg, shortening and milk, and pour into dry ingredients, stirring only until moistened.
3. Use a tablespoon to dip batter into greased muffin pans and fill 2/3 full.
4. Bake in a hot oven (425° F.) for 20-30 minutes until browned.
Makes 12 muffins.
