1/2 cup frozen unsweetened orange juice concentrate
1/2 stick low-fat margarine
1 tsp vanilla
low or no-calorie sugar substitute equal to 1 cup sugar
1 cup flour
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp Clabber Girl Baking Powder
1/2 cup ground pecans
Cream margarine, egg, vanilla and sugar substitute; add orange juice and beat until thoroughly combined. In a separate bowl, sift together flour, salt, soda and Clabber Girl Baking Powder. Add to creamed mixture, mixing until just blended. Stir in chopped pecans.
Spray a cookie sheet with cooking spray; drop dough by teaspoonfuls onto cookie sheet. Bake at 375 degrees for 12 to 15 minutes.
