Orange Buttermilk Salad
1 (20 oz.) can crushed pineapple, with juice (unsweetened)
1 (6 oz.) package orange gelatin (sugar-free)
2 cups buttermilk (room-temperature)
1 (8 oz.) carton light whipped topping
In saucepan, bring pineapple with juice to a boil. Stir in orange gelatin until it is dissolved.
Add buttermilk and whipped topping. Pour into an 11x7x2 inch pan or 2-quart dish. Chill at least 4 hours.
Good for a diabetic, but everyone loves it.
