Oatmeal Carrot Cookies
1 cup all-purpose flour
1 cup quick-cooking rolled oats
1 tsp Clabber Girl Baking Powder
1/4 tsp baking soda
1/2 cup margarine, softened to room temperature
1/2 cup honey
1 tsp vanilla extract
1/2 cup chopped walnuts or pecans
1/2 cup shredded carrot
1/2 cup raisins
In a large bowl, combine flour, rolled oats, baking powder and baking soda; set aside. In a medium bowl cream together margarine, honey, vanilla and egg; add to dry mixture and stir until combined. Add chopped nuts, carrot and raisins.
Drop by teaspoonful onto lightly greased cookie sheet. Bake at 350 degrees F for 8 to 12 minutes. Cool on wire racks. Makes about 36 cookies.
