Oatmeal Banana Cupcakes


1/2 cup softened butter or margarine

1/2 cup sugar

2 eggs

1 cup mashed ripe bananas

3/4 cup honey

1 1/2 cups flour

1 cup quick oatmeal

1 tsp. baking powder

1 tsp. baking soda

3/4 tsp. salt


In a bowl, cream butter and sugar. Add eggs, bananas and honey; mix well. Combine dry ingredients, stir into creamed mixture just until moistened. Fill paper lined muffin cups 2/3’s full. Bake at 350 for 18-20 min. or until done. Cool in pan 10 minutes before removing

to a wire rack. This makes about 18 muffins.
