Oat Muffin Surprises
1 3-ounce package cream cheese
1 egg yolk
1 1/4 cups all-purpose flour
1/2 cup quick-cooking rolled oats
1/4 cup packed brown sugar
1 tablespoon Clabber Girl Baking Powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 beaten egg
3/4 cup milk
3 tablespoons cooking oil
1/2 cup mixed dried fruit bits
For cream cheese filling, in a small mixing bowl combine cream cheese and egg yolk. Beat with an electric mixer on medium speed till combined. Set aside. Grease ten 2 1/2-inch muffin cups or line with paper bake cups. Set aside.
In a medium mixing bowl combine flour, oats, brown sugar, baking powder, cinnamon, and salt. Make a well in the center.
In a small mixing bowl combine egg, milk, and cooking oil. Add to flour mixture all at once. Stir just till moistened (batter should be lumpy). Gently fold in fruit bits. Spoon half of the batter into prepared muffin cups. Spoon about 1/2 tablespoon of the cream cheese filling into center of each cup. Spoon remaining batter into cups, filling cups 3/4 full. If desired, sprinkle tops with sugar.
Bake in a 400° oven for 15 to 18 minutes or till golden. Remove from pans; cool slightly on a wire rack. Serve Warm. Makes 10.
