New Orleans Pecan Pie

Ingredients

  • 2 eggs, separated
  • 1 C. (8 oz) sour cream
  • 1 C. sugar
  • 1/4 C. flour
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 1 pie pastry (9 inches) baked
  • 1 C. packed brown sugar
  • 1 C. chopped pecans
  1. In a saucepan, combine egg yolks, sour cream, sugar, flour, vanilla and salt. Cook and stir over medium heat till thickened, about 5 minutes.
  2. Pour into baked pie shell. Set aside.
  3. In a mixing bowl immediately beat egg whites till soft peaks form. Gradually add brown sugar, beating till stiff. Spread over filling while it’s still warm.
  4. Sprinkle with pecans.
  5. Bake at 375ยบ for 12-15 minutes or till golden.
  6. Store in refrigerator.
