Never Fail Cream Pie

Ingredients

  • 2/3 cup sugar
  • 1/3 cup cornstarch
  • 1/3 tsp. salt
  • 2 cups milk, scalded
  • 3 egg yolks, beaten
  • 2 Tbsp. butter
  • 1 tsp. vanilla
  • 1 baked pie shell
  1. Blend sugar, cornstarch and salt. Slowly stir in hot milk. Cook and stir till thickens
  2. Add 1/3 mixture to beaten egg yolks, then stir back into custard. Stir and cook 2 minutes more. Remove
  3. Cool a little -for at least 10 minutes (important step)
  4. Add butter and vanilla. Pour into baked pie shell

Meringue

  1. 3 egg whites, beaten stiff, then slowly add 1/4 cup sugar.
  2. Place on top of pie and put in 350 degree oven until top is lightly brown.
