My Dad’s Maichel or Instant Egg Drop Soup
My dad used to make this on Sunday afternoons, usually watching New Year’s football. It is three ingredients. I make this for my own sons and it still wins kudos. It requires a televised football game as backdrop flavoring.
1 packet instant chicken noodle soup
water, as required
1-2 eggs, beaten lightly
Prepare soup as package indicates.
As it simmers, stir in beaten eggs until they set, in swirls throughout the soup.
You can garnish with this with minced scallions.
