Mom Message Bread
Makes 1 loaf
3-1 / 2 to 4 cups all-purpose flour
1 / 3 cup sugar
1 envelope FLEISCHMANN’S RapidRise Yeast
1 teaspoon grated lemon peel
1 / 2 teaspoon ground cardamom
1 / 2 teaspoon salt
1 / 2 cup water
1 / 4 cup butter or margarine
2 large eggs
1 / 2 cup chopped dates
1 / 3 cup chopped almonds
1 egg, slightly beaten with
1 tablespoon water
1 / 4 cup softened butter or margarine
1 / 4 cup all-purpose flour
1 / 2 teaspoon water
In a large bowl, combine 1 cup flour, sugar, undissolved yeast, lemon peel, cardamom, and salt. Heat water and margarine until very warm (120o to 130oF). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs and 1 cup flour; beat 2 minutes at high speed. Stir in dates, almonds and enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
Shape dough into smooth ball; flatten to 10-inch round. Place on greased baking sheet. Cover; let rise in warm, draft-free place until almost doubled in size, about 1-1 / 2 hours.
Brush dough surface with Egg Glaze. Cut 2 slashes, 1 / 8-inch deep, across top of dough. Write “Happy Mother’s Day” or other message on bread with Writing Mixture squeezed through pastry bag fitted with 1 / 4-inch plain round tip. Bake at 350oF for 25 to 30 minutes or until done. Remove from sheet; cool on wire rack.
In medium bowl, combine butter, all-purpose flour and water. Stir to make smooth paste.
