Mock Apple Pie

Ingredients

  • 36 Ritz crackers
  • 1 3/4 cups water
  • 2 cups sugar
  • 2 teaspoons cream of tartar
  • 2 tablespoons lemon juice
  • 1 grated lemon rind
  • 2 tablespoons butter
  • 1/2 teaspoon cinnamon
  • 2 9-inch pie crusts
  1. Break crackers into coarse pieces and place in one of the crusts.
  2. Boil water, sugar, and cream of tartar in a saucepan and simmer for 15 minutes. Add lemon juice and rind, cinnamon. Cool.
  3. Pour this syrup over crackers. Dot with butter. Cover with remaining crust, trim, seal, and make fork holes for steam.
  4. Bake at 425°F for 30 to 35 minutes or until crust is crisp and golden
