Mini Mexican Pizzas

Ingredients

  • 4 6-inch tortillas
  • 1 16-oz. can fat-free refried beans
  • 6 Tbsp shredded Mexican-style cheese
  • 6 Tbsp frozen corn kernels
  • 1 14-oz. can chopped green chilis (optional)
  • Reduced-fat sour cream (optional)
  1. Heat oven to 450°. Place tortillas on 11×7″ baking sheet
  2. Divide beans evenly among tortillas, spreading within 1/2″ of edges. Sprinkle 1 Tbsp cheese & 1 Tbsp corn over each tortilla
  3. Drain chiles, sprinkle evenly over tortillas
  4. Bake 5-6 min. or until cheese is melted & tortillas are steaming. Remove from oven
  5. Transfer each tortilla to plate. Serve at once with salsa & sour cream
