Mini Chocolate Chip Tea Biscuits
4 cups flour
1/3 cup sugar
2 tablespoons Clabber Girl Baking Powder
1/2 teaspoon salt
1/2 cup butter
1 cup mini semi-sweet chocolate morsels
1 cup evaporated milk
1 1/2 teaspoons vanilla
To brush over biscuits:
2 tablespoons milk
Preheat oven to 400 degrees F. Grease 2 large cookie sheets.
In large bowl, combine flour, sugar, baking powder and salt. With pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in mini morsels; set aside. In small bowl, beat 3 eggs with evaporated milk and vanilla. Stir into dry ingredients just until soft dough forms. Turn dough onto well-floured surface. Knead briefly. Pat dough to 3/4 inch thickness. Cut with biscuit cutter. Place on prepared cookie sheets. Beat remaining egg with milk, brush over unbaked biscuits.
Bake 15 to 17 minutes in a preheated 400 degree F. oven. Makes about 1 1/2 dozen.
