Mincemeat Ice Cream Pie

Ingredients

1 quart French vanilla ice cream, slightly softened
1 1/2 cups mincemeat
1/2 cup chopped nuts, your choice
1-10″ graham cracker crust, bake 5 min and cool completely
1 cup heavy whipping cream
2 TBL brandy
1/2 cup diced mixed candied fruit 

Instructions
In a large bowl combine ice cream, mincemeat and nuts. Mix well. Spread into the crust and freeze till firm. When ready to serve, whip the cream to form soft peaks, fold in the 2TBL brandy and spoon over the pie. Sprinkle the top with the candied fruit.
