Mince Apple Coffee Cake


2 c flour
1 tsp baking soda
« tsp salt
« soft shortening
_ c packed brown sugar
1 egg
1-1/3 c prepared mincemeat
1 c canned applesauce
« c coarsely chopped walnuts


Preheat oven to 350 degrees. Grease and flour a 9x5x3″ loaf pan. Sift together flour, salt and baking soda and set aside. With mixer at medium speed, thoroughly mix shortening with sugar, then add eggs and beat till light and fluffy. At low speed, beat in mincemeat; then alternately beat in flour mixture and applesauce just until smooth. Stir in nuts. Bake 1-1/4 hours or until cake tests done. Cool for about 10 minutes before removing from pan.
Also I have a friend who uses mincemeat as a topping for vanilla ice cream.
