Mennonite Oatmeal Cake


1 c. quick rolled oats (old fashioned oats)
1 1/2 c. boiling water
1/2 c. butter or margarine
1 c. brown sugar
1 c. white sugar
2 eggs, beaten
1 1/2 c. flour
1/2 tsp. soda
1/2 tsp. cinnamon


8 tbsp. melted butter or margarine
1 c. brown sugar
6 oz can evaporated milk
8 oz flaked coconut
2 tsp vanilla
1/2 c. chopped nuts (optional)


Grease a 13×9 baking pan and preheat oven to 350 F.
Pour boiling water over oats; stir and cool. Cream together butter, brown sugar, white sugar, eggs. Sift together flour, soda, cinnamon and add to creamed mixture. Add oats; mix well.
Bake for 30-40 minutes, or until cake springs back when lightly touched. Remove cake from oven and turn on broiler.
Melt butter then add brown sugar, bring to a boil. Slowly add the evaporated milk and return to a boil. Remove it from the heat and add the vanilla and coconut. Frost cake while still warm, place under broiler for 2 minutes.
