“Meerettichkartoffeln” or, “Potatoes Mashed With Horseradish Cream”


  • 4 to 6 potatoes
  • Boiling water, salted
  • salt
  • 1 tablespoon butter
  • Freshly ground pepper
  • 1/2 cup dairy sour cream
  • 1 tablespoon horseradish
  • Minced parsley
  • Melted butter.
  1. Cook potatoes in the boiling salted water until tender.  Drain; sprinkle with the salt, cover pan, shake until potatoes are mealy.
  2. Mash, adding butter and freshly ground pepper, then add dairy sour cream, horseradish, and a little minced parsley.
  3. Whip as for mashed potatoes.
  4. Serve with the melted butter over the top.Very good with a pot roast.
