Meatball Sauerkraut Soup

Ingredients

  • 2 pounds x-tra lean ground beef
  • 2 T. olive or canola oil
  • 1 large onion finely chopped
  • 1 32 oz. bag saurkraut, or 2 1 pound cans drained and rinsed
  • 4 C. water
  • 2 15 oz. cans diced tomatoes
  • 10 whole black peppercorns
  • 1 bay leaf
  • salt and pepper to taste
  • sour cream for garish
  1. Shape the ground beef into 2 inch balls
  2. Heat oil in a skillet or in the bottom of a wide soup pan. Add the beef and brown lightly on all sides, then add the onions and cook until limp. Add the saurkraut, water, and tomatoes. Add the peppercorns,and bay leaf
  3. Simmer 1 hour for the best flavor
  4. Discard the bay leaf, add salt and pepper to taste
  5. Serve with sour cream on each serving
