Marinated Soybean Salad

Ingredients

  • 1 1/2 cup dry soybeans
  • 1/3 cup honey
  • 1/3 cup vinegar
  • 1 tsp salt
  • 1/4 tsp crushed basil
  • 1/8 tsp garlic powder
  • 1/8 tsp pepper
  • 1/4 cup chopped green onion
  • 2/3 cup chopped dill pickle
  • 1/2 cup chopped celery
  1. In large bowl, cover soybeans with water and let stand 2 hours; drain.
  2. Place soybeans in a large kettle and 8 cups water. Bring to boil, reduce heat and simmer, partly covered, about 1 1/2 hours or until soybeans are tender; drain.
  3. Combine honey, vinegar, salt, basil, garlic powder, and pepper. Pour over soybeans.
  4. Add chopped green onions and pickle.
  5. Chill at least 4 hours before serving, stirring occasionally.
