Marinated Kohlrabi

Ingredients

  • 4 kohlrabi, cut in julienne strips
  • 1/4 c. parsley
  • 3 Tbsp. olive oil
  • 1 clove garlic, minced
  • 1/4 tsp. basil
  • 1/4 tsp. salt
  • 1/4 c. green onions
  • 1 1/2 Tbsp. vinegar
  • 1/4 tsp. oregano
  • Dash of pepper
  1. Place kohlrabi in saucepan with 1 inch boiling water. Simmer 5 minutes. Drain and cool. Combine rest of ingredients in bowl. Pour over kohlrabi strips. Toss well. Cover.
