Marinated Carrots

Ingredients

  • 3 oz. juice from jar of hot jalapenos
  • 3 to 4 fresh carrots, sliced or diced
  • 1 med. onion, diced
  • salt to taste
  1. Blanch carrots and onion. Drain.
  2. Pour jalapeno juice over warm vegetables.
  3. Cover and store in refrigerator until completely chilled or overnight. Drain.
