Major Peters’ ‘South Of The Border’ Gazpacho Salad



  • Dressing:
  • 1/4 cup red wine vinegar,
  • 1/4 cup Major Peters’ Salsa Bloody Mary Mix,
  • 1 TBS minced yellow onion
  • 2 TBS Major Peters’ Sweetened Lime Juice
  • 1 tsp. black pepper
  • 3/4 cup olive oil
  • 2 tsp. salt
  • Salad:
  • 1 cup assorted colored sweet bell peppers (chopped)
  • 1 cup tomato (seasoned and chopped)
  • 1/2 cup yellow onion (chopped)
  • 4 cups mixed lettuce greens


Dressing: In food processor, combine all ingredients (except olive oil) until well blended. With processor running, add oil in a steady stream allowing oil to become well incorporated. Yields 4 servings. Salad: Toss first three ingredients with 1/2 cup dressing. Divide greens among four plates and top with tossed vegetables. Drizzle with dressing and serve.
