Zest (grated rind) from 2 lemons
1 cup superfine granulated sugar
2 cups flour
2 teaspoons baking powder
1 cup melted butter
In a bowl, beat eggs and sugar, stir in flour. Add baking powder, salt and lemon rind; mix well. Add butter and stir until well blended.
Preheat oven to 450 degrees F.
Grease and flour madeleine pan(s)
Pour batter into molds, place into oven
and bake for 10 minutes.
Remove madeleines from pans immediately and cool on wire racks.
For special decoration, you can dip one end of madeleine in melted chocolate or brush cooled madeleines with butter and sprinkle with colored sugars or sprinkles.
