Luby’s Pecan Pie

Ingredients

  • 1 cup light corn syrup
  • 1 cup sugar
  • 2 T. margarine
  • 1 tsp vanilla
  • 3 well beaten eggs
  • 1 Cup pecan halves, pieces
  • 1 9″ pie shell
  1. Heat oven to 350º
  2. In a heavy saucepan, combine corn syrup, sugar, margarine and vanilla. Bring mixture to a boil, stirring constantly. Remove from heat and cool completely. When mixture has cooled, add beaten eggs, mixing well.
  3. Place pecans in unbaked pie shell.
  4. Carefully pour syrup mixture over pecans.
  5. Bake for 1 hour or until center is set
