Low Fat Fruit & Oatmeal Bars

Ingredients

3/4 cup firmly packed light brown sugar
1/2 cup sugar
1 8oz container of yogurt, plain or vanilla
2 egg whites, lightly beaten
2 tbsp canola oil
2 tbsp fat free milk
2 tbsp vanilla extract
1 1/2 cup flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups quick or old fashioned oats
1 cup diced dried mixed fruit (raisins or dried cranberries)

Instructions

Heat oven 350 F. In a large bowl combine both sugars, the yogurt, egg whites, canola oil, milk and vanilla. Mix well. In a separate bowl whisk together flour, baking soda, cinnamon and salt. Add dry mixture to the yogurt mixture and mix well. Add oats and fruit and stir together. Spread into a 13x9x2 baking pan and bake for 28-32 minutes or until light golden brown. Transfer to a wire rack and cool completely. Cut into bars.
