Low Fat Date Bread
Ingredients
3 cups Hodgson Mill white flour
1 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
4 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon allspice
1 cup chopped dates
1 cup nonfat milk
sweetener equivalent to 1 1/2 cups sugar
2 eggs, beaten
1/4 cup low-fat margarine, melted
Instructions
In a large bowl combine flour, baking powder, salt and spices; set aside. In a medium bowl mix together dates, milk, sweetener, beaten eggs and margarine. Combine with flour mixture, stirring with a wooden spoon until mixed well.
Pour into a 9x5x3-inch loaf pan.
Bake in a preheated 350 degree F. oven for 1 hour, 15 minutes or until tests done when skewer inserted in center comes out clean.
Yield: one loaf or 34 slices, with 98 calories per slice
