Lima Bean Casserole

Ingredients

1 lb. bulk pork sausage

1 tbsp. olive oil

3/4 c. diced onion

1/2 c. diced green pepper

2 c. canned tomatoes

1/4 c. California sherry

1 tbsp. brown sugar

1/4 tsp. dried basil

1/4 tsp. dried thyme

4 c. cooked lg. dry lima beans (about

1 2/3 cup before cooked)

1/4 c. fine dry bread crumbs

Instructions

Crumble sausage as you cook in hot oil. Add onions, green peppers and cook for a few minutes more. Stir in tomatoes, wine, sugar and herbs. Pour over limas in baking dish, mix and sprinkle with bread crumbs. Bake in 350 degree oven 1 to 1-1/2 hours. Serves 4-5.
