Lemon Sponge Pie

Ingredients

  • 3 eggs, separated
  • 1 cup sugar
  • 2 Tbs. butter or margarine
  • 4 Tbs. flour
  • 5 Tbs. lemon juice
  • 1 Tbs. grated lemon peel
  • 1-1/2 cups hot milk
  • 1/4 tsp. salt
  • 1 9″ unbaked pie crust
  1. In a large bowl at medium speed, Mix sugar, butter, and egg yolks until light and fluffy.
  2. Add flour. Stir in juice and peel. Gradually add hot milk. In medium bowl, beat egg whites stiff, not dry.
  3. Fold into first mixture. Turn into pie crust.
  4. Bake at 400º for 10 minutes, then reduce heat to 325º for 45 minutes longer.
  5. Cool on wire rack for 30 minutes.
