Lemon Sour Cream Pie

Ingredients

  • 1 c sugar
  • 3 tsp cornstarch
  • 1 c milk
  • 3 eggs, separated
  • 3 T butter
  • 1 tsp grated lemon rind
  • 1/3 c lemon juice
  • 1 c sour cream
  • 6 T sugar
  • baked pie shell
  1. Mix sugar & cornstarch
  2. Add milk slowly & mix well. Cook over slow heat until thickened. Blend some of this mixture with yolks, beaten slightly. Return to rest of mixture & cook 2 minutes. Add butter, rind, & juice. Add to cooked mixture; stir well. Cover & cool well.When cooled, add sour cream
  3. Blend & spoon ito pie shell

Meringue:

  1. Beat egg whites & 6 T sugar til stiff
  2. Spread over pie
  3. Bake at 425ยบ for 5 minutes
