Lemon Frosting
Ingredients
2 cups sugar
2/3 cup water
4 tablespoons light corn syrup
4 egg whites
1/2 cup powdered sugar, sifted
2 teaspoons lemon rind, grated
1 teaspoon lemon extract
Instructions
In saucepan combine sugar, water and corn syrup. Cook over medium heat to 232 degrees F. Beat egg whites until soft peaks form. While beating, add syrup mixture. Add powdered sugar, grated lemon rind and lemon extract. Beat until stiff peaks form and frosting is of spreading consistency.
