Lemon Chile Glazed Salmon
This will work with other fish, just be sure to check for doneness.
2 Tablespoons soy sauce
1/3 cup rice vinegar
1 cup orange juice
2 cloves garlic, smashed and diced
1/2 teaspoon red chile flakes (more if desired)
2 teaspoons lemon zest, divided
4 salmon filets or steaks, with the skin on, 6-8 oz per person
Special kitchenware needed: broiling pan or a baking sheet covered with
non-stick spray for easier cleanup
For the sauce, measure all ingredients (reserve 1/2 teaspoon lemon zest for garnish) into a small sauce pan and reduce to 1/2 cup.
In the meantime, prepare the salmon for broiling. Spray a broiling pan with non stick spray for easier cleanup. Salt and pepper each side of the salmon.
Heat the broiler and set the rack about 7 inches from the heat. Cook the salmon till about halfway done. Remove and brush with the lemon chile glaze, lowering the heat or placing the salmon further from the heat so it will not burn or cook too fast. Repeat brushing with the glaze 2 to 3 more times.
The fish will achieve a nice shiny, glazed appearance. Garnish with the reserved lemon zest.
