Lemon Cake Pie

Ingredients

  • 1 lemon, use juice & grated rind
  • 1 1/4 cups milk
  • 1 cup sugar
  • 2 heaping tablespoons flour
  • 2 egg yolks
  • 1 tablespoon melted butter
  • 2 egg whites, beaten stiff
  • 1 9 inch unbaked pie crust
  1. Beat first 6 ingredients together. Fold in beaten egg whites.
  2. Pour into pie crust, bake in slow (325 degree) oven for 1 hour or until done.
