Lemon Blueberry Cobbler

Ingredients

  • 2 cups blueberries
  • 1 tsp fresh lemon zest
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 2/3 cup flour
  • 1 tsp baking powder
  • 3/4 tsp cardamon (I used 1/4 tsp nutmeg)
  • 1/2 cup heavy cream
  1. Preheat oven to 400 degrees
  2. Butter 8 inch glass pie plate (1-1/2 quart)
  3. Toss blueberries, zest, sugar, lemon juice and cornstarch until combined. Place in plate
  4. Sift flour, baking powder and cardamon. Add cream and stir until forms dough. Drop by mounds on top of blueberry mixture
  5. Bake 25 minutes until golden
