Leftover Turkey Salad

Ingredients

3 sm. tomatoes, sliced
1 can asparagus spears, drained and chopped

2 c. chopped fresh spinach

5 oz. turkey, cut into 1/2 inch strips

2 hard boiled eggs, chopped

2 green onions

1/4 c. plus 2 tbsp. low-cal Italian dressing

1/4 c. mustard

 

 

Instructions
Combine tomatoes, asparagus, spinach, turkey, eggs, and green onion in large bowl. Cover until chilled. Combine Italian dressing and mustard. Pour over salad. 6 servings.
