Leftover Turkey Roll-ups
1 sm. onion
1 1/2 stalks celery
2 tbsp. cream of mushroom soup (You will use remaining later)
1 egg, well beaten
In a mixing bowl, combine the above ingredients and set aside. Roll out thin Hungry Jack butter biscuits (or homemade biscuits) into oblong shapes as if rolling out biscuits to make fried pies. Place about 2 tablespoons of the meat mixture on each rolled out biscuit and roll the biscuits up into small loaves. Place the roll-ups in a cookie sheet and bake at 400 degrees until golden (about 25 minutes). Serve with the following sauce. MUSHROOM SAUCE:
In a saucepan, mix the remaining can of mushroom soup with a 1/2 pint of sour cream. Heat to boiling over medium heat (do not boil). Use over hot turkey roll-ups.
