Leftover Turkey Enchiladas

Ingredients

3 c. cubed turkey
2 c. grated Mozzarella cheese

1 (3 1/4 oz.) can ripe olives, sliced

1 1/2 c. creamed cottage cheese

1 dozen tortillas, fry to soften

1 (4 oz.) can chili peppers, chopped

1 lg. onion, chopped

1 clove garlic, minced

2 tbsp. oil

2 (8 oz.) cans tomato sauce

1 tsp. oregano

1 tsp. salt

Instructions
Combine turkey, 1 1/4 cups Mozzarella, olives and cottage cheese. Put turkey mixture on each tortilla. Roll and place in 9″x13″x2″ baking dish. Saute peppers, onions and garlic in oil. Add tomato sauce, oregano and salt. Simmer 5 minutes. Pour over enchiladas. Sprinkle with remaining cheese. Bake at 350 degrees for 25 minutes.
