Lady Bird Johnson’s Pecan Pie

Ingredients

  • 1/2 cup butter, softened
  • 1 cup each; sugar and dark corn syrup
  • 1-1/2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 3 eggs well-beaten
  • 2 cups coarsley chopped pecans
  • 1 (9-inch) pastry shell, unbaked
  1. In large bowl, blend butter, sugar, corn syrup, vanilla and salt. Beat until thoroughly blended
  2. Add eggs. Beat gently until blended. Stir in pecans.
  3. Pour into pie shell and bake at 375 degrees about 40 minutes, or until top is a toasted brown and filling is set when pie is gently shaken
