King Kamehameha Pie

Ingredients

  • 9″ baked pastry shell
  • 1-1/2 c pineapple juice
  • 3/4 c sugar
  • 3 T cornstarch
  • 7 med. cooking apples, pared & cut into wedges (7 cups)
  • 1 T butter
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  1. In pan combine 1-1/4 cup juice & sugar
  2. Bring to boiling: add apples. Simmer covered, til tender but not soft. Lift apples from syrup. Set aside to drain
  3. Combine cornstarch & remaining juice. Add to syrup in pan. Cook & stir til thickened & bubbly.Cook 1 minute more
  4. Remove from heat, add butter, vanilla & salt. Cool 10 minutes without stirring
  5. Pour about 1/2 the syrup into shell, spreading to cover bottom. Arrange apple wedges on top, spoon remaining syup over apples
  6. Cool thoroughly
  7. Garnish center of pie with whipped cream. Sprinkle with chopped macadamia nuts, if desired
