Kale with Bacon and Garlic
Greens are everywhere and gaining popularity as people discover their nutritional benefits and fresh flavor. Kale is my favorite, as its intense green color and sweet flavor enhance any dish.
1 pound fresh kale
4 slices lean bacon
1 large garlic clove
1 teaspoon lemon juice or wine vinegar
Bring a large pot of salted water to a rolling boil. Tear the kale greens from their thick stems and rinse them well. (Discard the stems). Add them to the water and boil for 3 minutes, uncovered. Drain and rinse briefly under cold water.
In a large skillet cook the bacon until crisp, and transfer to a paper towel. Pour off all but 1 tablespoon of the bacon fat from the skillet and add the garlic. Cook it, stirring, over moderately low heat, until softened, about 2 minutes. Add the kale, lemon juice, crumbled bacon, and salt and pepper to taste, and cook, stirring until hot.
