Kahlua Pumpkin Pie

Ingredients

  • 1 9-inch pie crust
  • 1/4 cup Kahlua
  • 1/2 cup light brown sugar
  • 1/4 cup light corn syrup
  • 1 cup undiluted evaporated milk
  • 1/2 tsp salt
  • 1-1/2 tsp pumpkin pie spice
  • 2 large eggs, beaten
  • 1-1/2 cups canned pumpkin
  1. Place pie crust in 9-inch pie pan and bake at 450° for 7-8 minutes, until lightly browned
  2. Meanwhile, beat Kahlua, sugar, corn syrup, milk, salt & pumpkin pie spice. Stir in beaten eggs and pumpkin and mix until smooth
  3. Leave crust on oven rack and slice out rack a little ways so you can pour the mixture into the crust
  4. Carefully slide rack back into oven
  5. Reset oven to 400° and bake until barely set in center, about 40 minutes
  6. Cool on wire rack
  7. Serve with Kahlua Cream Topping

Kahlua Cream Topping

  1. Beat 1 cup whipping cream with 1 Tbsp powdered sugar and 1 Tbsp Kahlua, just until stiff
  2. Turn into serving bowl and drizzle 1 Tbsp Kahlua on top
