Italian Rice And Pea Soup


  • 1/3 cup olive oil
  • 1 slice bacon, chopped
  • 1 small onion, chopped
  • 1 Tbsp. parsley, minced
  • 1 pkg. frozen peas
  • 1 quart of soup stock or water
  • 1/2 cup uncooked rice
  • salt and pepper to taste
  • 3 Tbsp grated parmesan cheese
  1. Sauté onion, bacon, ham, and parsley in oil until light brown. Add peas, cook 5 minutes, stirring frequently. Add liquid and bring to a boil. Add washed rice, seasoning and cheese. Cook over medium heat until rice is done
  2. Serve very hot, and sprinkle with more parmesan cheese, with Italian bread on the side
