Italian Plum Cobbler

Ingredients

  • 1 1/2 C Bisquick
  • 2 T sugar
  • 2 T butter melted
  • 1 1/2 lbs Italian plums, pitted and quartered (about 3 1/2 cups)
  • 1 1/4 c sugar
  • 1/4 c water
  • 2 T quick cooking tapioca
  • 2 T butter
  • 1/3 to 1/2 c milk
  1. Combine biscuit mix, 2 T sugar, and melted butter, set aside
  2. Combine plums 1 1/4 c sugar, water, and tapioca. Cook over medium heat, stirring constantly, till mixture boils; stir in 2 Tbsp. butter. Pour into 8x8x2″ pan
  3. Add enough milk to dry ingredients to moisten; drop by spoonfuls on top of hot plum mixture; spread around.
  4. Bake 425° for 20 minutes
  5. Serve warm with cream or whipped cream
